I love and respect waffles. More than pancakes. #factoftheday
I did it. I took my first spin class. Well, not my first one ever, but the first one in my new attempt for more cardio and more exercise. I love my CrossFit, I like to lie and act like I love my running, and now I’m trying to love spinning. I’ve lost some inches by lifting less during my workouts and running more, and feel much more comfortable in my skin, so I’m keeping it going with a little more movement in my day. Spinning makes you real sweaty.
It was funny to walk into a globo gym for the first time in probably over 3 years. I haven’t been in one since I worked at the Rec Center in college. And if you went to a big college, you know what those gyms look like. Lots of cut off t’s, lots of short shorts, and lots of make up. And girls that haven’t eaten in weeks because they are trying to lose 20 pounds in 2 weeks before spring break. Obviously, college students are extremely intelligent about their eating and drinking habits. Maybe if they cut the beer out, they wouldn’t have to starve themselves. And pass out while ellipticalling. That’s not a word. Whatever. Anywho, after being in a CrossFit gym for over 3 years and knowing every person in the gym, it was weird to walk into a gym where no one talks much. Everyone looks so serious. And it was weird to have mirrors everywhere. Not really into that. I like not knowing my pain face.
Anywho, do I need to watch Game of Thrones? I feel like I’m the only person in the world of Facebook that isn’t watching it then Facebooking about it. I don’t even know what it’s about. But now I’m interested. And curious. I want to be part of the in crowd.
Do you ever wonder how many fake people exist on Facebook? No? I do. I totally do. Facebook is kind of really creepy.
OMG. A new season of The Kardashians is on. I don’t care what you think of me, I LOVE that show. L.O.V.E. It’s so addicting. I don’t really know why. Probably because their makeup is so awesome, or because they have lots of money. People with lots of money are interesting to watch. Not really, but kind of.
I’m really boring myself today. I can’t imagine how you’re feeling.
Cinnamon Banana Waffles
- Yield: 5 1x
Ingredients
- 2 medium bananas, very ripe
- 2 eggs
- 3 tablespoons maple syrup
- 1 tablespoon coconut oil
- 1/4 cup coconut or almond milk
- 1 cup almond flour/meal
- 1 cup unsweetened shredded coconut
- 2 tablespoons arrowroot powder
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- pinch of salt
Instructions
- Preheat waffle iron.
- Place bananas, egg, maple syrup, coconut oil, and milk in a food processor and puree until smooth.
- Add ingredients from the food processor into a large bowl and add almond meal, shredded coconut, arrowroot flour, cinnamon, baking soda, and salt and mix well to combine.
- Pour mixture into waffle iron (mine was non stick and they didn’t stick at all, but before careful and maybe grease yours before).
- My batter made 5 waffles total.
- Top with bananas, syrup, and even some grass fed butter. That would be real good.

I’ve never watched Game of Thrones, but with all this hubbub about it, I’ll be reading them! It actually sounds pretty good.

This waffles are awesome. My husband made this this morning for my birthday breakfast. I only put cut up strawberries on my waffle, no syrup, simply awesome.
I got so excited to make these until I realized I was out of bananas. How does that happen? 99% of the time I have a surplus of ripe bananas sitting around that I can’t decide what to do with, until of course I find an awesome sounding recipe to use them in. Oh well, next time. By the way your chocolate waffles are pretty awesome too.
These are WONDERFUL! My kids ate the leftovers…I was so mad because I was saving them for me. Best waffles ever!
Hi Juli! Since I did not have a waffle iron, I went out and purchased a Calphalon. I just had to try this recipe and it was fantastic. I actually made mine in my Vitamix (I had to finely grind the coconut flakes.) The batter did seem a bit thick, so I probably would add some more almond milk the next time. Not only were they delicious but I wasn’t hungry for more than four hours. You call yourself a food hoarder; I consider myself a food snob. For this food snob, I will definitely be trying out more of your recipies. Thanks!

I’m following the Whole30 plan right now, so I left out the maple syrup both inside of the waffles and for the topping. I cooked down some strawberries in only water for the “syrup.” They didn’t look very good, but they tasted just right, and honestly I did not miss the added sugar! The waffles themselves were amazing. Thank you so much for posting this. I love your blog and recipes!
