I love and respect waffles. More than pancakes. #factoftheday
I did it. I took my first spin class. Well, not my first one ever, but the first one in my new attempt for more cardio and more exercise. I love my CrossFit, I like to lie and act like I love my running, and now I’m trying to love spinning. I’ve lost some inches by lifting less during my workouts and running more, and feel much more comfortable in my skin, so I’m keeping it going with a little more movement in my day. Spinning makes you real sweaty.
It was funny to walk into a globo gym for the first time in probably over 3 years. I haven’t been in one since I worked at the Rec Center in college. And if you went to a big college, you know what those gyms look like. Lots of cut off t’s, lots of short shorts, and lots of make up. And girls that haven’t eaten in weeks because they are trying to lose 20 pounds in 2 weeks before spring break. Obviously, college students are extremely intelligent about their eating and drinking habits. Maybe if they cut the beer out, they wouldn’t have to starve themselves. And pass out while ellipticalling. That’s not a word. Whatever. Anywho, after being in a CrossFit gym for over 3 years and knowing every person in the gym, it was weird to walk into a gym where no one talks much. Everyone looks so serious. And it was weird to have mirrors everywhere. Not really into that. I like not knowing my pain face.
Anywho, do I need to watch Game of Thrones? I feel like I’m the only person in the world of Facebook that isn’t watching it then Facebooking about it. I don’t even know what it’s about. But now I’m interested. And curious. I want to be part of the in crowd.
Do you ever wonder how many fake people exist on Facebook? No? I do. I totally do. Facebook is kind of really creepy.
OMG. A new season of The Kardashians is on. I don’t care what you think of me, I LOVE that show. L.O.V.E. It’s so addicting. I don’t really know why. Probably because their makeup is so awesome, or because they have lots of money. People with lots of money are interesting to watch. Not really, but kind of.
I’m really boring myself today. I can’t imagine how you’re feeling.
Cinnamon Banana Waffles
- Yield: 5 1x
Ingredients
- 2 medium bananas, very ripe
- 2 eggs
- 3 tablespoons maple syrup
- 1 tablespoon coconut oil
- 1/4 cup coconut or almond milk
- 1 cup almond flour/meal
- 1 cup unsweetened shredded coconut
- 2 tablespoons arrowroot powder
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- pinch of salt
Instructions
- Preheat waffle iron.
- Place bananas, egg, maple syrup, coconut oil, and milk in a food processor and puree until smooth.
- Add ingredients from the food processor into a large bowl and add almond meal, shredded coconut, arrowroot flour, cinnamon, baking soda, and salt and mix well to combine.
- Pour mixture into waffle iron (mine was non stick and they didn’t stick at all, but before careful and maybe grease yours before).
- My batter made 5 waffles total.
- Top with bananas, syrup, and even some grass fed butter. That would be real good.

These didn’t really work in my Belgian waffle maker — non-stick but sprayed anyway. Top and bottom both stuck, waffle ripped apart. It was still gummy in the middle so I cooked longer, but it was still a wreck. A delicious wreck, but still…. Any thoughts on what may have gone wrong? I wondered if a more “standard,” not-so-deep waffle maker might do the trick…?
I’m not sure. i use a non sticky belgian waffle maker and it works! I’m sorry they didn’t turn out!
I had the same problem but they were still yummy.
That happened to me, too! I tried 3 times and they didn’t work 🙁 They still tasted delicious as deconstructed waffles but I am determined to figure out the problem! Thanks for yet another amazing/delicious waffle 🙂
OMG these were quite possibly the best waffles ever!!!! They came out so perfect and the recipe gave me 5 large waffes and one medium!!! wow! im in love! They held together well on the iron and were fluffy and light…Tried them with yogurt, strawberries and almonds, and then with butter and coconut butter and I have to say, I preferred them with just butter and coconut butter, they are so delicious on their own! I’ll be making these alot more, im addicted!
My daughter has been wanting to switch to a paleo diet and wanted to make some waffles this morning. I suggested that she try making paleo ones and found this recipe. She made them and I have to admit that these were the best waffles I have ever had. Seriously better than the “traditional” waffles I am used to. Amazing recipe that I will refer to anytime I want waffles! Wish they made them like this at restaurants.
As a FFK (Former Fat Kid) and lover of all things sweet, this is just the kind of recipe that will help the hubs and I keep on track. We are new to Paleo and have been struggling to find food that tastes as good (if not better) than the crap we love, but that won’t kill us. My next step in this new life will involve sweating, but I am fighting that, too. Thanks for the yummy eats. You rock!
Hey! This reciepe looks amazing. And I was so psyched to try it out… and then I realized all the almond products in it. I’m allergic! If anyone knows any good substitutes, they would be much appreciated.

Is there something I could substitute the arrowroot powder with? I don’t have any of this.
I made these for brekky this morning and they were yummy, even with nothing on them. Were they meant to be crunchy on the outer because mine weren’t?
