I love and respect waffles. More than pancakes. #factoftheday

I did it. I took my first spin class. Well, not my first one ever, but the first one in my new attempt for more cardio and more exercise. I love my CrossFit, I like to lie and act like I love my running, and now I’m trying to love spinning.  I’ve lost some inches by lifting less during my workouts and running more, and feel much more comfortable in my skin, so I’m keeping it going with a little more movement in my day. Spinning makes you real sweaty.

It was funny to walk into a globo gym for the first time in probably over 3 years. I haven’t been in one since I worked at the Rec Center in college. And if you went to a big college, you know what those gyms look like. Lots of cut off t’s, lots of short shorts, and lots of make up. And girls that haven’t eaten in weeks because they are trying to lose 20 pounds in 2 weeks before spring break. Obviously, college students are extremely intelligent about their eating and drinking habits. Maybe if they cut the beer out, they wouldn’t have to starve themselves. And pass out while ellipticalling. That’s not a word. Whatever. Anywho, after being in a CrossFit gym for over 3 years and knowing every person in the gym, it was weird to walk into a gym where no one talks much. Everyone looks so serious. And it was weird to have mirrors everywhere. Not really into that. I like not knowing my pain face.

Anywho, do I need to watch Game of Thrones? I feel like I’m the only person in the world of Facebook that isn’t watching it then Facebooking about it. I don’t even know what it’s about. But now I’m interested. And curious. I want to be part of the in crowd.

Do you ever wonder how many fake people exist on Facebook? No? I do. I totally do. Facebook is kind of really creepy.

OMG. A new season of The Kardashians is on. I don’t care what you think of me, I LOVE that show. L.O.V.E. It’s so addicting. I don’t really know why. Probably because their makeup is so awesome, or because they have lots of money. People with lots of money are interesting to watch. Not really, but kind of.

I’m really boring myself today. I can’t imagine how you’re feeling.

Cinnamon Banana Waffles

Instructions

  1. Preheat waffle iron.
  2. Place bananas, egg, maple syrup, coconut oil, and milk in a food processor and puree until smooth.
  3. Add ingredients from the food processor into a large bowl and add almond meal, shredded coconut, arrowroot flour, cinnamon, baking soda, and salt and mix well to combine.
  4. Pour mixture into waffle iron (mine was non stick and they didn’t stick at all, but before careful and maybe grease yours before).
  5. My batter made 5 waffles total.
  6. Top with bananas, syrup, and even some grass fed butter. That would be real good.

    Not sure if I missed this answer or not already but what type of arrowroot powder do you use? I can’t buy it locally and was looking online through Amazon but there are so many different options. Thanks.

    We have been paleo but still having dairy for the past 15 months,,found out yesterday that our 19 month old son is lactose intolerant and milk soy protein intolerant. We are now very strict paleo, these waffles were absolutely amazing and the little guy are 1/2 of the batch, thanks Juli your going to make this no dairy transition easy for us

    I don’t really care for shredded coconut. But I’m assuming I won’t really taste it in this recipe once it exits the food processor, right???

    I could not get this to work… any tricks or tips? I had to add some wheat flour to save the batter and the flavors were pretty good without toppings. Thanks!

    Juli – tried making these with coconut flour instead of almond flour. Batter turned out crazy thick. Tried adding more almond milk to no avail. Think I need more eggs. Any idea on how many eggs would work? I tried adding 8 more to the batter, but still didn’t bind that well. Consistency of the gloop improvved though. Good news is they turned out to be good pancakes! Thanks in advance.

    These waffles are AMAZINGLY deeeelicious!! Juli- thank you so much for such a wonderful recipe that we have been making every other Sunday with the kids. My 5, 3 and almost 2 year old absolutely love eating these waffles. I am a huge fan of many other recipes of yours. Love love love your posts 🙂

    I’m sorta new to Paleo cooking and am always confused by coconut milk. Is there a way to know if a recipe is calling for the thin kind in the carton or the thick kind in the can? (I guessed this recipe was referring to the thin kind b/c it can be substituted with almond milk?) Help?! What am I missing?

      if it HAS to use canned coconut milk, then i say that. otherwise, it usually can be carton

    We made this this morning, but instead of using a waffle iron I made them in my mini donut iron and dipped them in chococolate . They were awesome.
