I don’t know about you, but I’m missing ice cream shops right now. Which is stupid because I never really went to many in the past. Wait, that’s not true. I used to go a frozen yogurt shop at least once a month. But now that it’s hot outside, nothing sounds better than roller skating my way to an ice cream shop, standing in line to taste all the flavors, then eating it while sitting on a curb. But now we can’t do any of that. Sure, you can pick up a pint to-go, but it’s just not the same. So instead, I’m whipping up my own ice cream at home and enjoying it out on my back patio. Like tonight, for Cinco de Mayo! We are also ordering taco pizzas and margaritas from a local spot to celebrate. Tonight is going to be a good night.
What’s your favorite kind of ice cream? Mine is sea salt caramel, with salt on top. If you’re not putting salt on your ice cream, you’re missing out. My husband is currently making a peanut butter oat bowl every morning and it has some maple syrup in it. I told him to put some flake salt on top of it and his mind was blown. That has nothing to do with ice cream, but it’s just to prove my point. Salt with anything sweet makes it so much better. Especially on ice cream. Just trust me on this one.
Another thing you should trust me on…waxing your nose hairs. It’s the best.

Coffee Ice Cream
- Prep Time: 10 minutes
- Total Time: 35 minutes
- Yield: 2 pints 1x
Ingredients
- 2 (14-ounce) cans of full-fat coconut milk
- 1/4 cup cold brew concentrate
- 3/4 cup maple sugar
- 1 tablespoon instant coffee
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- Place coconut milk, maple sugar, instant coffee, vanilla extract and salt in a high speed blender and blend until smooth and combined.
- Pour the ice cream mixture into ice cream maker and follow directions for that specific ice cream maker. Once mixture has churned and thickened, eat as soft serve straight from the ice cream maker OR pour soft serve ice cream into a container and place in the freezer to harden for 2-3 hours. Remove from freezer about 20 minutes before serving, then scoop and serve!

I just bought the Cuisinart Frozen Dessert appliance Juli recommended and this coffee ice cream was my first attempt at making ice cream and it was SOOOO good!!! I did throw in some dark chocolate, mini chips. Unfortunately, I could not find maple sugar anywhere in my area (I guess I’ll be ordering online), therefore, after doing a google search for a maple sugar substitute, I used brown sugar.
