Is all food more fun when it has candy eyes? Answer – yes! I don’t make a shit ton of recipes for kids, mostly because this blog is not made for children (obviously), nor do I know anything about them, nor do I rarely ever have them in my household. Kids aren’t really a big part of our lives. I don’t have any nieces or nephews since I’m an only child and my SIL and BIL don’t have any kids. And my group of friends either aren’t having kids or are not to that stage yet. I’m currently in the – ummmmmm maybe, I don’t know, sure, nah, we’ll see, maybe not – stage. One of our friends was over yesterday with their kids, who are awesome kids and make life more fun, but once they left, I was quite happy with the silence. And went back to the maybe not stage. Kids are a big deal. To all the parents out there who made that decision so easily, I tip my cap to you because I think it’s scary are shit.
Speaking of scary as shit, 2020 Halloween is coming up which means it’s about to be the scariest day of the year. And to honor Halloween in the best way possible, I thought I would make some fun treats for the blog leading up to it. This recipe may not be scary, but it’s fun AF. What kid wouldn’t want to eat a bowl of blue ice cream with cooking dough on top? And weirdo kid, that’s who. And I’m sure that weirdo kid is still lovely, but I don’t trust em. Since many of you are stuck indoors with your kids these days, I thought this would be a fun afternoon treat that you could easily whip up together, add some eyes to, and get some extra nutrition in. Is this as healthy as broccoli or kale? No. Get outta here. It’s Halloween, for God’s sake!
Now if you’re wondering what makes it blue, don’t worry, it’s not blue food coloring. I’m not a fan of food coloring and I stay away from it. But luckily there is something called blue spirulina. Spirulina comes in both green and blue. It’s algae! And it’s a superfood! And since it’s a superfood, it’s packed with antioxidants, it’s an anti-inflammatory, and it can help with all kinds of things like lowering blood pressure, improve muscle strength and endurance, and aid in blood sugar control. Pretty neat, right? And since kids never stop moving or screaming, maybe you as the parent should eat this, as well. Gotta keep that blood pressure down. Oh wait, I didn’t even mention that it’s a great source of protein, magnesium, phosphorus, and potassium. Who knew that a bowl of nice cream could be so nutrient dense? Now remember, I know nothing about kids so please try this recipe out and let me know how it goes. I’ll base my pregnancy decision off of that.
Cookie Monster Nice Cream
- Prep Time: 20 minutes
- Total Time: 20 minutes
- Yield: 3-4 servings 1x
Ingredients
For the cookie dough
- 1/2 cup softened coconut oil or ghee or grass-fed butter
- 1/2 cup maple sugar
- 1 teaspoon vanilla extract
- 3/4 cup cassava flour
- pinch of salt
- 1/2 cup mini chocolate chips
- candy eyes
For the nice cream
- 4 cups of frozen banana
- 1 teaspoon vanilla extract
- 1–2 splashes of oat, almond, or other nut milk
- 1 teaspoon blue spirulina
Instructions
- Use a hand mixer or stand mixer to cream together softened coconut oil (ghee or butter), sugar and vanilla extract until combined. Slowly add the cassava flour while the mixer is running until all of the flour is combined. Then fold in salt and chocolate chips. Set aside.
- Place frozen bananas, vanilla extract, and a splash of milk in a food processor and blend on high. Add more milk, if needed and scrap down the sides as you go. The bananas will become creamy and thick like soft serve ice cream. Once combined, add the blue spirulina and blend once more until blue throughout.
- Pour nice cream into 3-4 bowls, top with cookie dough, then place 2 candy eyes in each bowl on top of the cookie dough. Serve immediately!

I’m just relieved that this recipe doesn’t have beans in it (I know, I know, don’t knock it till you try it but I’m not at the point where I’m just having beans in ice cream quite yet)! Excited to try this out!
I chose not to have children and married a man with 3. Now I’m a grandma to an adorable 1 year old and never had to go through labor. It was quite a smart decision on my part. And since she has a dairy allergy, I’ll try making this ice cream for her.

Ok, never heard of Blue Spirulina powder before, but I am totally buying some – because … it makes stuff really BLUE! The possibilities seem endless… (I also hear it is good for you….but really I want it so I can make blue foodstuffs without food coloring poison) 🙂
