I obviously have quite the collagen obsession lately. Yes, it’s a problem. But a good problem. I’m just constantly looking for new ways to get collagen in my diet. First it was coffee, then muffins, and now cookies. These cookies came out absolutely perfect the first time and they were pretty challenging to put down. Warning you now. I made them last week and I’m secretly hoping that my husband finished them off so I won’t have the temptation to come home to after a week of eating out for every.single.meal.

I just got back to Denver from Palm Springs last night and while I was there, I had dinner with the marketing director of La Quinta Resorts. She doesn’t eat paleo and I said nothing about collagen, but I did mention that she has amazing skin and she said it’s thanks to collagen. I feel like I never hear that from people outside of the paleo community so that was pretty rad. AND a great reminder why I continue to take collagen day after day! If you’re not on the collagen train yet, GET ON IT! Your older self will thank you someday!PaleOMG Collagen Chocolate Chip Cookies

Speaking of skin, I am so pumped to get another profractional treatment soon! I’ve done two deep treatments so far that left me questioning why the hell I did it on the first day, then SO FREAKING HAPPY by the sixth day. It’s quite an emotional rollercoaster. And what’s so cool with profractional is that it continues to work over time. Your skin is continuing to rebuild collagen up to six months later so lines, wrinkles, scarring and even dark spots are minimized! It’s the best. But since I tend to scare the sh*t out of my friends or any PaleOMG readers with my scary bloody face photos, I’m going to get a light profractional and show everyone that it doesn’t have to be that scary or extremely painful, and you can still get great results. I’m so excited! And in major need of it now since I’ve been traveling to sunny places nonstop lately and my dark spots are crushing it lately.

PaleOMG Collagen Chocolate Chip Cookies

You guys, I’m so happy to be home. My poor little panda (meaning my French bulldog Jackson) has been sick since I’ve been out of town. My husband found him throwing up a pink foamy mixture all our living room rug then he kept trying to lie down everywhere and couldn’t get comfortable plus his heart was racing. So my husband decided to take him into the emergency vet (which is a big deal because my husband doesn’t throw everything out of proportion like I do) where he seemed to be completely fine as soon as they walked in. The doc gave him some anti-nausea medication and now he seems a little better and can eat solid food, thank God. But the rug is definitely ruined. I felt so bad for being gone for almost entire week, so I ended up sleeping on the couch with him last week and cuddled hard. Plus I changed my schedule around today so I could just hang out with him and pet him nonstop. I’m such an annoying dogmom. Speaking of, I need to go. I have a dog to pet.

Go make these cookies!!

Ingredients

Scale
  • 1 cup thick raw cashew butter (make sure it’s thick and not runny)
  • 1 cup maple sugar
  • 1 egg, whisked
  • 1/4 cup collagen peptides
  • 1 tablespoon tapioca flour
  • 1 tablespoon coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together cashew butter and maple sugar using a large spoon. Then add egg and mix again until well combined.
  3. Then add the collagen, tapioca and coconut flour, baking soda, vanilla, salt and chocolate chips then mix to combined.
  4. Use a cookie scoop to scoop out around 2 tablespoons of dough and make into a round ball. Place parchment paper lined baking sheet. This dough will create about 12 cookies.

Lately, inspired by your “cooking with collagen posts,” I’ve been whisking it into my eggs for omelettes…seems to add a subtle, lovely change to the texture too!

    1. juli says:

      genius!!

  4. Brittany says:

Juli – can you use the green lid beef gelatin collagen for these? I have two full tubs from Vital Proteins that I need to use and 12 dozen cookies sounds like a great idea.

    1. juli says:

      yes!

  5. Danielle says:

SO making these this weekend! Glad to hear Jackson is doing better. My poor pup ruined a rug this week too, except his stomach bug was coming out the other end 🙁 Sadly, the rug was not salvageable, but the good news is he is also feeling better!

    1. juli says:

noooooo! that’s definitely worse. poor thing!

Made these cookies last night and they are SO good! I subbed out coconut sugar for maple since that’s what I had on hand.

    1. juli says:

awesome!! so glad you loved them!

  8. Laura says:

Hugs to Jackson (and you!) I have a nearly 12-year old Frenchie who is like my child. I LOVE him so much and freak out when even the smallest thing is wrong so I totally get it. Glad he is on the mend!

    1. juli says:

for real! completely freak out if anything at all is wrong

  9. Jenn says:

PSA: I tried using Trader Joe’s cashew butter – it’s too runny. 🙁 I tried to pivot and bake them in small baking dish, but the cashew butter was too runny and they wouldn’t really set up. It’s cool though, I’ll probably just eat them out of a pan with a spoon. 🙂

    1. juli says:

good to know. i definitely used a thick cashew butter for these ones!

    2. Lauren says:

I tried the same thing! I used TJ cashew butter and ended up adding 1/2 cup coconut flour and 1/2 cup tapioca flour. It thickened it up enough that it worked like batter. Next time give that a try! Just add more flour! 🙂

  10. Amy says:

These sound awesome! Any thoughts on subbing with a flax egg…I’m new to having an egg allergy so haven’t experimented much…since it’s not cake I’m wondering if there’s less worry about rising. Thanks!!

    1. juli says:

no clue, i’ve never played around with flax egg
