I obviously have quite the collagen obsession lately. Yes, it’s a problem. But a good problem. I’m just constantly looking for new ways to get collagen in my diet. First it was coffee, then muffins, and now cookies. These cookies came out absolutely perfect the first time and they were pretty challenging to put down. Warning you now. I made them last week and I’m secretly hoping that my husband finished them off so I won’t have the temptation to come home to after a week of eating out for every.single.meal.

I just got back to Denver from Palm Springs last night and while I was there, I had dinner with the marketing director of La Quinta Resorts. She doesn’t eat paleo and I said nothing about collagen, but I did mention that she has amazing skin and she said it’s thanks to collagen. I feel like I never hear that from people outside of the paleo community so that was pretty rad. AND a great reminder why I continue to take collagen day after day! Speaking of skin, I am so pumped to get another profractional treatment soon! I’ve done two deep treatments so far that left me questioning why the hell I did it on the first day, then SO FREAKING HAPPY by the sixth day. It’s quite an emotional rollercoaster. And what’s so cool with profractional is that it continues to work over time. Your skin is continuing to rebuild collagen up to six months later so lines, wrinkles, scarring and even dark spots are minimized! It’s the best. But since I tend to scare the sh*t out of my friends or any PaleOMG readers with my scary bloody face photos, I’m going to get a light profractional and show everyone that it doesn’t have to be that scary or extremely painful, and you can still get great results. I’m so excited! And in major need of it now since I’ve been traveling to sunny places nonstop lately and my dark spots are crushing it lately.


PaleOMG Collagen Chocolate Chip Cookies

You guys, I’m so happy to be home. My poor little panda (meaning my French bulldog Jackson) has been sick since I’ve been out of town. My husband found him throwing up a pink foamy mixture all our living room rug then he kept trying to lie down everywhere and couldn’t get comfortable plus his heart was racing. So my husband decided to take him into the emergency vet (which is a big deal because my husband doesn’t throw everything out of proportion like I do) where he seemed to be completely fine as soon as they walked in. The doc gave him some anti-nausea medication and now he seems a little better and can eat solid food, thank God. But the rug is definitely ruined. I felt so bad for being gone for almost entire week, so I ended up sleeping on the couch with him last week and cuddled hard. Plus I changed my schedule around today so I could just hang out with him and pet him nonstop. I’m such an annoying dogmom. Speaking of, I need to go. I have a dog to pet.

Collagen Chocolate Chip Cookies

  • 1 cup thick raw cashew butter (make sure it’s thick and not runny)
  • 1 cup maple sugar
  • 1 egg, whisked
  • 1/4 cup collagen peptides
  • 1 tablespoon tapioca flour
  • 1 tablespoon coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1/3 cup chocolate chips


  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together cashew butter and maple sugar using a large spoon. Then add egg and mix again until well combined.
  3. Then add the collagen, tapioca and coconut flour, baking soda, vanilla, salt and chocolate chips then mix to combined.
  4. Use a cookie scoop to scoop out around 2 tablespoons of dough and make into a round ball. Place parchment paper lined baking sheet. This dough will create about 12 cookies.
  5. Place baking sheet into the oven and bake for 10-12 minutes.
  6. Remove from oven and let cool for 5-10 minutes before removing from baking sheet to place on cooling rack. 
  7. Then eat up and get your collagen in for the day!

    I seriously want to make these tonight! So my question to you so I don’t have to go to the store (haha) – can I use almond butter instead of cashew butter? And can I use coconut sugar instead of maple sugar? Or do you recommend me what’s in your recipe ingredients?

      i always recommend using what’s in my recipe so that it tastes the same as i intended it to, but you can definitely try it however you want. and yes, both almond butter and coconut sugar will work, the color of the muffins will just be different and the taste will be different

    These never rolled into balls for me. I followed the directions and the dough was very wet. The cookies formed one giant pan cookie in the oven. Does this recipe need to be altered for Seattle’s altitude? I can’t think why this would happen?

      it probably had to do with you cashew butter. you definitely need a thick cashew butter for this recipe

    These are so good my fiancé didn’t realize they were healthy/gluten free and he and his friend ate almost all of them while I was out. They ate my collagen! Enjoy your nice skin, dudes who won’t appreciate it….

    I made these cookies today and they were delish!! I had to sub cashew butter for almond butter and found my dough got very crumbly. I added an extra 1/2 of an egg which really helped. Thanks for sharing this recipe. I love all of your recipes; easy to follow, healthy, delicious and addicting! I’ve gotten all my family and friends on the Paleomg bandwagon ????????????????

    I would love to make these and I have everything on hand except the tapioca flour, do you know if I could just use more coconut flour or is there another simple sub? I’m not familiar with tapioca flour…

      no, tapioca flour and coconut flour react completely different. i would recommend finding tapioca flour or you could also sub arrowroot flour

      I found out you can substitute corn starch for tapioca – 2 : 1 ratio so for this recipe you would use 1/2 tbsp of corn starch.

    ok, Juli…I was dubious, but these are sooo yummy and satisfying!!! I finally just had to sub out sugars…I couldn’t wait any longer to have ALL of the ingredients in my pantry, and figured ‘hey, it’s paleo enough!’ I’ll grab some maple sugar next grocery run, and give the recipe as written a whirl next time.
    (I used 3/4 cup coconut sugar instead of the 1 cup maple sugar) Thanks for the great recipes and inspiration. xx

    I love this recipe! I don’t make any other chocolate chip cookies now. Note: I always add one additional egg and then they spread out and get that awesome chewy texture. For some reason when I make them as is, they come out crumbly.

    I made this using the exact ingredients Julie did and it was awesome! I used the dairy free chocolate chunks and it was such a good call. I was craving cookies and this hit the spot. The 12 min bake time is the best part of this, it was sooo quick!! Definitely making again.
