I’m so addicted to World Market right now. And buying dresses online. But mostly World Market. It’s by far one of the greatest stores ever. EVER.

I need to tell you something. Something that is very exciting. Mostly for me, not you. But I need to tell you anyways. I leave for Mexico today. Yep. I’ve packed my gigantic suitcase (that thankfully my girlfriend Sarah gave to me so I didn’t have to spend hundreds of dollars on a new one. Thank you very much, Sarah) and I’m off to the airport. Some friends have decided to take the plunge into the world of marriage. I’m seeing a common theme as I get older. Anywho, I’m headed there to watch them say their ‘I Do’s’ and then party the rest of the week. No, for real. This group likes to party. I’m not the best partier in the world, so it should be an interesting experience. I’m pretty sure I’ll be waking up every morning to workout and wait for someone else to wake up so I don’t have to eat breakfast by myself. That would just be embarrassing. Not really, but you know what I mean. How is it that I’m the youngest out of the group and I can’t drink that much? If I started to drink in the morning like so many of my friends will do, I would be in bed by 4. And even though that does slightly sound like my kind of vacation, that’s not really showing off my fun side. We’ll see how it goes. Wish me luck.

But don’t you worry. I’ll still have 3 new posts for you next week. I know, only 3?!? WTF, Juli. I suck. BUT it was all I could get done for you folks before I left. Sometimes you just gotta vacation.

I wonder what the food will be like at this resort. I haven’t been to this part of Mexico before, so I’m super interested what I’m in for. Pretty sure it will be like any other beach vacation I’ve been on, and well, I’m totally cool with that. Eat, drink, lay out, swim, eat, drink more, shower, eat and then sleep in a wonderful big bed. Beautiful. I just hope they have a decent gym. I’m totally down for working out on the beach, but after a while, the amount of sand you find in your crotch from doing burpees in the deep sand, gets old. I don’t even really own workout shorts at this point, so I was forced to run in my swimsuit at one point on my trip to the Dominican Republic. I can’t even imagine what that may look like. Frightening, at best.

Deep Chocolate Coconut Almond Butter

Ingredients

Scale
  • 1.5 cups roasted, unsalted almonds
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup almond oil
  • 1/8 cup raw honey
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon cinnamon
  • pinch of salt
  • 3 heaping tablespoons of coconut butter, melted

Instructions

  1. Add almond and cocoa powder to the food processor and mix well until it begins to clump together.
  2. While the food processor is still on, add in almond oil slow to help combine.
  3. Then add the honey, vanilla extract, cinnamon and salt.
  4. Then mix in the coconut butter.
  5. Mix until well combined.
  6. Eat with anything, obviously.

    So ironic you mention Health Bent!! I was wearing my paleomg headband when I hiked half dome in Yosemite last weekend and ran into someone on the cables who said, “PALEOMG!     Love me some Health-Bent. Megan & Brandon (the authors) actually dropped in to my gym last week. Not only are they awesome cooks, but they were both amazing athletes too and super nice! They brought me their new cookbook and it is awesome ya’ll. Definitely a must have!

    This looks amazing! So I’ve been trying to find some good shorts for CF, ones with a lot of motion, and breathable. Do you have any recommendations? My old ones are just about completely at the end of themselves 🙂 Hope Mexico was amazing! I looove the Ceviche down there!

    Can you please stop posting amazing recipes like this? I’ve made it, no joke, at least 3 times now..yes, in the last week. The first two times with olive oil instead of almond oil – and it was still amazing. I left out the coconut cream both times..the first time it was a little dry, so I added a little bit more olive oil the second time. Bought almond oil this weekend and made it again, the texture is totally different, way more smooth – almond oil is totally worth it! (But I still love my two previous attempts, still delicious and a little different of a taste.)

    Also, two years ago I never thought I’d ever ever wear capris/pants to workout. Now, I can’t imagine ever wearing shorts again. I just feel like it’s way easier to squat/do burpees/etc. with pants?
