I can’t believe it’s 7pm and I’m JUST getting my blog post up. This never happens. But today has been bananas. Workout, 3 grocery store trips, cooking, cleaning, photographing, filming, impromptu Tesla test drive, editing, and now couch sitting while I type this up and wondering how dinner is going to appear out of no where. But it’s here! Festive cookie bars! You know what makes them festive? These little adorable red and green candies. Festive AF. To be honest, they could be festier, but I didn’t want to go to the grocery store for a 4th time. It is what it is, ok? Just eat the damn cookie bars!

It was my first time driving a Tesla today and I’m officially obsessed. My car lease doesn’t end until July, but Brian was at the mall, where a Tesla store is, and decided to take one for a test drive since I’ve been talking about them for months. It’s so weird getting into a Tesla for the first time since there are no buttons. Everything is smooth and clean and futuristic. And since it seems like the future is NOW these days, I’m ready for one. It’s so cool to see a company finally mix up the car industry. No more talking to a pushy salesman then filling out paperwork for 4 hours while they try to upsell you on everything. “You want a Tesla? Cool, order it online and we’ll ship it to you.” “Don’t want one? Cool, bye!” It’s like you’re buying a shirt online. It’s so damn cool!

Major bummer that my lease isn’t up until July, but I’m glad I’ve narrowed down my search. Not only is it a great car and a car that will begin to change cars forever, but it’s the easier than buying a TV at this point. 2020 brought some dark clouds, but 2021 is going to bring the sunshine along with the badass future. It’s so crazy to think that someday people won’t drive their cars. Some I, Robot shit right there. Hopefully minus the fact that robots take over and try to kill you. Major downer. I would at least love to have a robot that would simply sit next to Jackson and scratch him all day. It’s hard to type and scratch at the same time. Speaking of, Jackson needs some love. As do these cookie bars.

Festive Cookie Bars

Ingredients

Scale
  • 1 cup nut butter
  • 1 cup coconut sugar
  • 1/4 cup melted ghee (or coconut oil, etc.)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup paleo baking flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • pinch of fine salt
  • 1/2 cup green candies
  • 1/2 cup red candies

Instructions

    1. Preheat oven to 350 degrees F. Line an 8×8 baking dish with parchment paper.
    2. In a large bowl, whisk together nut butter, coconut sugar, ghee, vanilla extract, and eggs.
    3. Once combined, add in the paleo baking flour, cinnamon, baking soda, and a pinch of salt. Then fold in candies.
    4. Pour mixture out into baking dish and spread out evenly. Place in the oven to bake for 40-45 minutes, until brown and the middle is cooked through. Let cool for 5 minutes before removing from baking dish and cutting into 16 squares.

My brother is a dealer and last time I needed a new car, I called him and let him know. Within 48 hours he’d found the perfect vehicle and handled my trade in. All I had to do was show up and sign!

    We’ve had our Tesla for 1.5 years and I absolutely love it. It’s so safe, quiet and beautiful! The automatic updates are amazing and if you ever need service, the service people come to your house! It’s pretty slick. We got a super charger installed in our garage so keep that in mind. We get about 40 miles charged per hour, so it takes about 7 hours for a completely full charge. Highly recommend it!

    Could I use a gluten-free (Bob’s Red Mill 1-1) rather than a paleo baking flour mix, or would the texture just not be the same? I’m thinking red & purple chocolate candies for Valentine’s Day here…❤️💜
