No, these are not weed brownies. Freaking Coloradans.

So I remember this one weekend, when I was craving sweets hard core, and came across the amazing blog, Balanced Bites by Diane Sanfilippo and her Grain-Free Magic Cookie Bars. And they were AWESOME. Like way awesome. And the other night, when I wanted to make the glorious cookie bars again, I was saddened when I figured out I didn’t really have all the ingredients on hand. So I made up my own version. But in brownie form. I love brownies. I have many different kinds on my blog. Like sweet potato, or fudgy style, or cherry goodies. Now I’ll have magic ones. I’m so magical.

Remember how I didn’t post on Monday? I don’t know why I keep reminding you, but I felt real bad about it. But it was for good reason. You see, I was teaching some cooking classes at the Air Force Academy for the Fire Department. It was rad. I got to talk a lot, cook, and hang out with firefighters. How could I complain about that? One day I even got to shoot a firehose with a remote control. It was a fire engine that is made to put out airplane fires. It’s awesome. Does anyone else feel like I don’t know what the hell I’m talking about? I’m not good with my firefighting words.

this was the nice man that put up with me and let me use the remote controlled firehose. this poor guy was so patient with me. I’m pretty sure he thought I was suuuuuper weird. smart man.
outside the crazy cool fire engine in gorgeous Colorado Springs
am I a giant? seems like it. these ladies came for my presentation. i love girl crossfitters.

Either way, it was a fun. I cooked them some Caramelized Onion and Sausage Stuffing and fed them Chewy Pecan Pie Brittle. I served the brittle first so they would like me and have a sugar buzz throughout my presentation. Get people high on sweets and they’ll stay interested for at least an hour. Pure facts right there.

I haven’t decided if I’m going to post anything on Thanksgiving. I could. Should I? What would I post about? Something intense. Let’s talk about intense stuff.

What does that even mean? God I’m weird.

  • Yield: 4-6 1x

Ingredients

Scale

For the brownie layer

  • 15 dried medjool dates, pitted
  • 1/4 cup coconut oil, melted
  • 2 tablespoons coconut flour
  • 3 eggs, whisked
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons raw honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • pinch of salt

For the magic layer

Instructions

  1. Preheat oven to 365 degrees. I know, weird number, just do it.
  2. Now add your dates to the food processor and begin to pulse until you get a clumpy paste.
  3. Then add your coconut oil and cocoa powder to the food processor and puree until well mixed and it has become smoother.
  4. Then add your eggs, coconut flour, honey, vanilla, baking soda and powder, and salt and puree until smooth.
  5. Grease an 8×8 baking dish with some extra coconut oil, then pour in your brownie mix and smooth out throughout the dish.
  6. Now make the top layer. Add your shredded coconut, coconut oil, coconut butter, and honey to a bowl and heat in the microwave. Don’t tell me a microwave isn’t paleo, you’re not creative.
  7. Mix ingredients together ingredients until smooth then add your whisked egg whites and mix well.
  8. Pour topping over your brownie batter and smooth out until covering the entire surface of the brownie.
  9. Add dish to oven and bake for 20-25 minutes.
  10. Let cool then cut into pieces. I LOVE THESE BROWNIES.

Well it took several days for me to actually make them… finally got around to it last night. There is really only one thing I can say… YOU MADE A PREGNANT WOMAN VERY HAPPY…. even better because my hubby did the dishes. WooHoo. These were delicious.

I made these for a holiday party yesterday. They were a big hit! I substituted dried pairs for the dates. They were yummy! I may add a little bit more honey next time. Thank you… I’ve been paleo since 8/12 and it’s getting easier, especially with great blogs like yours!

Hi there. I have a question about these brownies. I’m seriously considering going Paleo and the foods it looks like I’m going to be able to eat look fantastic! My question is this:

Why are baking soda and/or powder considered Paleo?

Please don’t misunderstand, I’m not trying to be rude, I am sincerely curious.

Thanks to any and all who answer.

This is truly an amazing recipe!, Going paleo has been tough for me without sweets, and your recipes help a TON! Haven’t made one thing that I wouldn’t make again. Soooo happy to say goodbye forever to plain ol’ chicken and broccoli! Makes cooking fun again. Thank you!

P.S. took these brownies to work and NO ONE could tell they were without butter, sugar, and flour 😉

I just made these and they’re absolutely amazing!
I’m so glad I found your website. I’m Dutch and the whole Paleo thing isn’t really popular here: my family is worried I’ll die without the average 6 slices of wholegrain bread with butter and gouda. 😉
However, after only 3 weeks of going Paleo, I feel awesome! I’ve lost 3kg, even though this wasn’t my primary objective.
But…as it’s that time of the month, I was craving chocolate. Badly.
That’s when I found your site and this great recipe! I’m afraid that, with all the yummie recipes you’ve posted, those 3kg will be back on in no time! Darn it. 😉

Hi! I don’t think the link to the Coconut Butter Concentrat or the homeade coconut butter is working? Thanks! Cindy

I am soooooo glad I have found this site! I am on my 2nd day of paleo but so determined to do this. Your recipes looking amazing (especially this one), I think you are going to make paleo very easy 🙂 I am in the UK so there are a few things I am probably going to struggle with ingredient wise but I can’t wait to get started! Thank you. xx
