Break ups are the worst. They make us question why we even decided to get in another relationship. And make us wonder what we could have changed to make it work. But sometimes we just have to face the fact, the relationship didn’t work and we are back on our own. I love relationships. I love loving someone and having them love me back. But I guess sometimes love isn’t enough. It still never seems to get easier.
While I tried not to completely drown in my relationship sorrows, Sergio helped me drown myself in chocolate peanut butter swirl frozen yogurt topped with chocolate sauce and chocolate sprinkles. Yeah, I got chocolate wasted. Thankfully it didn’t make me sick. But I thought chocolate wasted would be better than alcohol wasted. Alcohol leads to depression. Depression leads to text messages. Nothing good comes from texting, I know that for a fact.
In another effort to keep from constantly crying, I took on a mom roll. Meaning babysitting a couple dogs. Children aren’t that fun. Dogs are. And small dogs are pretty great, other than their love for barking. At anything. Parked cars. Grass. Fences. Really anything they can find to bark at. What they don’t seem to love to do is poop outdoors. Instead they felt the need to leave their tootsie rolls for me to step on. Twice. But they made up for it by cuddling with me constantly. I understand while people like small dogs, it’s like your own grown up style teddy bear. A socially acceptable one. I haven’t had a teddy bear in years, but having a fluffy little bear-dog sleep right next to me is even better than I remember. I kind of want a dog. I need a cuddle buddy.

I pretty much took the long weekend to think about things. My last break up was covered up with alcohol and trips to sketchy dance clubs to keep from thinking about it. They didn’t seem sketchy to me at the time, but when I go downtown now, I always wonder what I was thinking when I actually liked going to those bars. Laura and I spent one night downtown, not drinking since we had to get back to our pups, and I wondered why anyone liked to spend their nights down there. Sure, you get whistled at by guys who can’t even spell their own name, but the bars are too loud to have a conversation with anyone. And conversations are usually dull. Am I just getting to that age where hiking up my skirt shorter than it falls in order to appeal to the opposite sex sounds like an awful night out? Or is it that I just like having sober conversations? I really don’t know. What I do know is that I got a parking ticket. All signs are pointing towards Juli staying out of downtown. I’m listening to the signs. And getting chocolate wasted.
Overnight Chocolate Coffee Chia Breakfast Pudding
- Yield: 2-4 1x
Ingredients
- 1/2 cup brewed coffee (chilled)
- 1/2 cup full fat canned coconut milk
- 1 heaping tablespoon almond butter (or other nut or seed butter)
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup or honey
- 1 tablespoon unsweetened cocoa powder
- 1/4 cup chia seeds
Instructions
- Blend brewed coffee, coconut milk, almond butter, vanilla extract, maple syrup, and cocoa powder in a blender.
- Place the blended mixture into a resealable large jar (or 2 smaller jars) then add chia seeds. Seal jar and shake.
- Place in refrigerator overnight or for at least 3+ hours.
- Eat up. Breakfast is served.

Was looking for something different for breakfast, and this was wonderful. Thank you for the recipe. When I was ready to eat, I cut up a small banana and mixed, and it was heavenly.
This is delicious and so easy to whip up. It is nothing for me to make 4 or 5 batches
Can you use any sealed container or must it be glass?

I finally got some chia seeds (on sale at Costco) JUST to make this pudding. But, oops, I gave my husband the rest of the cold coffee. Instead I used Harmless Harvest pure coconut water. I also used half almond butter and half coconut butter. Mixed it up in my magic bullet, shook it up for a couple minutes while I put my ingredients away, and three hours later tasted it and all I can say is O.M.G.!, it was AMAZING! Already planning the next time ill make this.
Just made this as I had a little left over almond butter from making some last week for another recipe. I just threw the chia seeds in the blender with everything else. It was already ‘pudding’ by the time I finished blending. Excited to try this for breakfast. I only used 1TBS of honey, next time will up it a little or try maple. I ate what I couldn’t get in the jar. It was RICH!! Oh and I used SO Delicious coconut milk (beverage) as its labeled. Thanks for thinking of this…coffee is my FAVORITE!!
I made this last night because I’ve had chia seeds in the fridge for a while and figured I should use them. I used cow’s milk since it’s all I had on hand and totally forgot about the vanilla, but otherwise made it as written. I used sunbutter for the nut butter due to allergies in the house. I blended everything up in my Vitamix, added the chia seeds and split it into two glass jars. Shook them & put them in the fridge. I shook them again about 15 minutes later and then one more time maybe a half hour after that, then they sat all night.
I was a little hesitant to try it. After the first bite, I thought, “Not bad. Interesting…” It wasn’t very sweet since I think I used less honey than called for (I just squeezed some in). Then had another bite, and another… Then I couldn’t stop eating it – LOL! It mostly tasted of chocolate rather than coffee (either way is fine with me) and it’s healthy! I ate most of one jar at breakfast and then finished it up with lunch. Trying hard to save the second for tomorrow…. 🙂 Thanks for the recipe!
I know this is a super old post but I think I am dumb when it comes to chia pudding. I have tried making a version of this 3 times with failure. I used just coconut water instead of milk first and thought that was my problem but NO! What is happening is after I shake it the seeds distribute weird and I get a lot at the very top and at the very bottom. In the middle everything stays liquid. Why is this happening?
try shaking the container a couple times. let it sit for an hour, shake, sit for another hour, shake, and once more. that has helped me

Like Juli said, let it sit for a while. When I first made the recipe I made it in the morning then stuck it in the fridge. After I got home from work I had some of it for a snack and it had significantly thickened up. You can also make it in the evening and then let it sit in the fridge overnight. I hope this helps!
Boy…really sucks right now to be allergic to eggs, almonds, and milk. Hard to be paleo…especially at breakfast time. I feel like I can’t eat anything…
