Ever since I started the bean protocol last year, I began adding in more foods that I didn’t eat for years while following the paleo diet. And one of those foods is OATS!! My Peanut Butter Protein Oats are a weekly staple in our house and I’m always finding different ways to incorporate oats into my diet. Oats are a great source of soluble fiber plus they have a ton of different vitamins and minerals in them. Aaaaaand they don’t hurt my stomach. It’s a real win-win-win. So no, this recipe is not paleo, but it’s been working great for me so I don’t want you to miss out on any delicious recipe I make, paleo or not! It ruffles some people’s feathers when I share things that aren’t paleo, but no one got anywhere in life without upsetting a few people along the way.
Isn’t that funny to think that people get upset about recipes? The world is wild.
Speaking of wild, life has been extremely wild lately. Whatever is going on in the universe right now…the planets pulling at each other and the moon turning over a new chapter for many of us…life has had some huge ups and downs. Last week I watched my BFF walk down the aisle then we flew home early to support our friends at a funeral for their dad. Leading up to my BFF’s wedding, it was two extremely emotional weeks watching two of my friends lose their fathers, then the wedding was emotional because I love my BFF to depths of my soul, then home to a really tough situation. Life has been full of ups and downs, and it feels heavier than normal lately. But I feel like things are turning a corner, that light is at the end of the tunnel. And I say that because it’s been about 24 hours since I cried. I actually cried happy tears yesterday so things are really looking up.
As we all know, life is just hard sometimes. That doesn’t mean we shouldn’t experience it, that doesn’t mean that the pain will stay with you forever, but the ups and downs are inevitable. But those painful moments teach you so much. They guide you into the next chapter, a better chapter. I know you’re thinking to yourself, “Who TF is this chick…I just wanted the recipe for overnight oats.” And that’s totally fair. I just wanted to send out a little reminder to anyone who needs it – things will get better. Feel all the feels, keep going, and know that your next chapter is going to be so much better than your last. And go eat some overnight oats while you wait it out.
Strawberry Cheesecake Overnight Oats
- Prep Time: 5 minutes
- Total Time: 6 hours 5 minutes
- Yield: 1 serving 1x
Ingredients
- 1/2 cup oat milk
- 1/3 cup dairy-free cream cheese*
- 1–2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup gluten free oats
- 1 1/2 teaspoons chia seeds
- 1 gluten free graham cracker, chopped
- 3 strawberries, diced
- 1 teaspoon hemp hearts
Instructions
- Blend together oat milk, cream cheese, maple syrup, and vanilla extract.
- Add oats to a jar along with chia seeds and the liquid. Mix to combined. Cover and place in the fridge overnight.
- In the morning, top overnight oats with chopped graham crackers, strawberries, and hemp hearts before serving.
