I was pretty hesitant to make strawberry salsa. Strawberries kinda freak me out sometimes. They have almost a furry outside and sometimes they simply taste like sh*t. Honestly, I’m just not a big fruit guy. I would rather eat carrots than strawberries. That’s weird, I get it. And I’m even annoyed with myself for saying it. But for real. Veggies just taste better to me. But I’m glad I second-guessed myself because this salsa is BOMB and it’s so damn easy to make. Last night I baked spicy salmon in the oven, cooked turmeric rice in the instant pot, then I topped it all off with this strawberry salsa and it was SO DAMN BOMB! And so colorful. If you guys haven’t made rice in the instant pot yet, I highly recommend it. You’ll never cook rice on your stovetop again. That way is bullsh*t and I hate it. I’ve lost two pans to the stovetop method yet I’ve never failed in the instant pot.

PaleOMG Strawberry Salsa

We officially had the hottest day so far here in Colorado, which was great timing since our upstairs air conditioning decided not to work at the same time. Our upstairs got up to 83 degrees yesterday so I decided to sleep downstairs on the couch instead. I really take advantage of any excuse I can to sleep on the couch with Jackson. Jackson does not sleep in our bed (husband’s rules which I am thankful for in the long run) so whenever I get an excuse to snuggle with him all night, I take it! It’s still about 78 degrees up there so I’ll be spending my days downstairs until it’s all fixed up. Yesterday I was getting ready upstairs and my sticky bra kept sliding off. It reminded me of my days I lived in this cute lil house with two girlfriends when I was 23 and it had no air conditioning. I remember having to cook for the blog in this tiny kitchen while it was 90 degrees inside. I also remember dating a guy simply because he had air conditioning. Does he know that? Probably not. Do I feel bad about it? No. That air conditioned place saved me from insanity. And I cooked for him. It was a real win-win for both parties involved. This would have been a great recipe to whip up in that 90 degree cottage home. Oh the memories.

Strawberry Salsa

Ingredients

Scale
  • 16 ounces strawberries (1012 strawberries), finely diced
  • 1/4 red onion, minced
  • 1 jalapeño, minced
  • small handful of cilantro, roughly chopped
  • juice of 1 lime (you may want more depending on how juicy the lime is)
  • 1 tablespoon agave or honey
  • salt and pepper, to taste

Instructions

  1. Chop all fruits and veggies. 
  2. Add everything to a bowl and toss to combined. 
  3. Eat with chips, on top of protein, or however you prefer! Store in fridge for up to 3 days.

    Hi Juli!
    This looks super good, will definitely make it. I’m wondering about your instant pot rice procedure. Do you use the rice cooker setting or the the pressure cook and what is your water ratio? I’m embarrassed to say I haven’t nailed this on my own yet, always a little extra water or rice is super stuck to the bottom. Thanks!

      i use the rice cooker settings! and i use the liquid ratio that’s recommended on the packaging
