I literally don’t understand how it’s almost Christmas. It doesn’t feel like it whatsoever. Probably because I was in Mexico just a week ago and it hasn’t been cold in Colorado at all. Except it’s suppose to be a high of 9 degrees that day. Just planning ahead here…Jackson will NOT be getting a walk that day. We will have to run circles around the house instead. Which probably isn’t a great idea since our Christmas tree has fallen over twice. My husband put one up while I was in Mexico and I came home to holiday cheer in our house but I had to leave town again right away and when I came home the second time, it was on the floor. So I hoisted it back up and what did it do an hour later after I had already cleaned up? It fell over again. So I left it there until my husband got home from being out of town too. I  think it’s safe to say that I’m over the real Christmas tree idea.

Everyone always says that real Christmas trees are so great because they smell so good. But ummmm I don’t smell sh*t. And I have the most sensitive nose of all time. The only time I smell the tree is when I’m trying to keep it upright and have to grip the needles until my hands bleed. Then my hands smell like a mixture of blood and pine needles. What a lovely holiday smell. You know what smell like a Christmas tree? A pine tree candle. Shocker. I think I’m going to push hard about getting a fake tree next year. No mess, no clean up, no work. I’m such a grinch when it comes to Christmas but maybe a fake Christmas tree next year will do the trick.

I wish I wasn’t such a grinch and it’s something I need to work on because my husband loves Christmas and having a wife that doesn’t like it just isn’t cute. Luckily we are doing something extra fun on Christmas Day which is getting me in the spirit already. We plan to dress in onesies, which reminds me I need to get one, then we are going to make mimosas, a big brunch, then watch Christmas movies all day. So far I’ve found a unicorn onesie, a fox onesie, a gingerbread man onesie, a snowman onesie, and an old school onesie. Which one would you choose? And we are still deciding which movies to watch. So far we have Elf and Home Alone recorded, but I also LOVE The Holiday so hopefully I can find that one on TV and record it. What are other good ones I’m missing?? Obviously A Christmas Story and Christmas Vacation, but anything else you love to watch during the holidays?! Tell me tell me!

Sugar Cookie Skillet

Ingredients

Scale
  • 1 1/2 cup almond flour
  • 1/4 cup + 1 tablespoon coconut flour
  • 1/4 cup + 1 tablespoon tapioca flour
  • 1/2 teaspoon baking soda
  • 4 tablespoons ghee
  • 4 tablespoons maple syrup
  • pinch of salt
  • 1 tablespoon snowflake sprinkles

Instructions

  1. Preheat oven to 325 degrees F. Grease a 10.5 inch round griddle.
  2. Add all ingredients (except for the sprinkles) into a food processor and pulse until completely combine. The dough should mix into a slight ball once combined. Place the dough in the griddle pan and use your fingers to press dough around evenly throughout the pan. Poke holes with a fork in the dough to keep it from rising in the oven. Top with sprinkles throughout.
  3. Bake crust for 18-20 minutes, until golden brown. Remove then let cool for about 10-15 minutes before slicing.
  4. If you’re feeling extra fun, use cookie cutters to cut out cute holiday shapes!

    I agree with Alaina, Love Actually is one of my favorites! It has been one of the Christmas movies my husband and I have watched together since we started dating!

    I don’t allow Christmas music until a week beforehand because I get so sick of it. Grinching is fine! Also, The Holiday is the best movie to watch over Christmas, so I had looked it up on TV guide. It is playing Sat Dec 23rd at 8pm, Sun Dec 24th at 12am, and Sun Dec 24th at 8pm if you want to record it…all on Lifetime 🙂

    These are not Christmas movies per-se, but we always watch Bridget Jones’s Diary and New in Town every Christmas season. Bridget Jones’s Diary starts and ends at Christmas, and New in Town is set in Minnesota, so there’s snow and they do have a Christmas scene. My husband loves both of these movies, so they aren’t strictly “chick-flicks!”

    Also, A Charlie Brown Christmas is a must!

    Also, The Holiday is one of my favs, I just watched it this past weekend. I’ve never met anyone else that knows that movie. Another favorite of mine is Jingle All the Way, probably one of Arnold Schwarzenegger’s best roles.
