Stop what you’re doing right this very second and GO MAKE THESE MUFFINS!! It took me three tries to get these puppies right and then they came out absolutely perfect so I want you to experience them right now!! The first batch sunk in the middle, the second batch was way too dry, then the third batch was pure gold. Golden, chocolate button, muffin top joy. And no, there is no dairy in this recipe. No need to get your panties in a bunch.

In case you haven’t heard me talk about it before, I’m OBSESSED with collagen. Obsessed. My girlfriend told me a while back to start taking it but I ignored her as long as possible. Until she told me it would help the collagen and elasticity of my skin. I will do anything for better skin. Stick collagen up my butt? If it means I won’t age, I’m totally down. Sadly, it doesn’t work like that. And don’t worry, I’m not telling you to shove collagen up your butt. You can just drink it instead.

I started taking collagen over a year ago and now I won’t go a day without it. My hair never use to grow. Ever. And it was pretty unhealthy. But once I started taking collagen, my hair started to grow and became incredibly shiny, my nails started to grow, and I swear that it’s helped my skin…along with slathering it in products and burning it off with lasers. It has been life changing. And now I tell everyone I know about it. If you’re not taking collagen at this point, DO IT!! DO IT NOW!!

If you’re still trying to figure out ways to get collagen into your diet, well I’m here to help.

  1. Put it in your coffee. That’s what I do every morning and no, I don’t think it tastes like anything.
  2. Don’t drink coffee? You’re weird. But whatever, put it in your hot beverage.
  3. Hate hot beverages? WHAT IS WRONG WITH YOU?? That’s fine, blend it into a smoothie.
  4. Hate smoothies? I can’t handle you anymore. Make these muffins.

But for real, here’s some recipe ideas that I’ve made with collagen (and I have more to come!) –

PaleOMG Greek Yogurt Collagen Chocolate Chip Muffins

I have an allergy to nuts and almond flour which usually flares me up, but I don’t have any issue with this almond greek yogurt. Just a heads up in case you have issues with almonds. So excited for you to give these a try and tell me what you think! Now do what I say and get to it!!

  • Author: juli
  • Yield: 11-12 muffins 1x

Ingredients

Scale
  • 1 container (5.3 ounces) greek yogurt*
  • 2 eggs
  • 1/2 cup maple sugar
  • 1 teaspoon vanilla extract
  • 2/3 cup cassava flour
  • 1/3 cup collagen peptides
  • 1/4 cup tapioca flour
  • 2 teaspoons baking powder
  • pinch of salt
  • pinch of cinnamon
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment muffins liners and spray with coconut oil spray.
  2. In a large bowl, whisk together greek yogurt, eggs, maple sugar, and vanilla extract until completely combined. Then sift together cassava flour, collagen peptides, tapioca flour, baking powder, salt and cinnamon. Once sifted, add to the large bowl with the greek yogurt mixture. Use a spatula to mix until completely and smooth then fold in chocolate chips.
  3. Use an ice cream scoop to scoop the batter into 11-12 greased muffin liners. Then place in the oven to bake for 20-23 minutes, until a toothpick comes out cleans.
  4. Eat up! If you do not eat these all in one day (well, hats off to you), I recommend reheating these before eating to make sure they are just as delicious as the day you made them!

Notes

*I used Kite Hill Almond Milk Greek Yogurt, but you could also use a cashew milk or coconut milk yogurt!

Loved the muffins! Of course I made them mini! And so happy to eat them for breakfast in the morn & get more protein in!

  2. Elena says:

I put Collagen in my overnight oats! My only caution is to mix well or you will get a congealed bite in a corner…

  3. Alexandra says:

Looks amazing! Does it need to be “Greek” yogurt? Or will plain cashew milk yogurt work as well? I’ve looked all over for dairy free Greek yogurt but can’t find it. Thanks!

    1. Bethany says:

If you’re feeling ambitious, you can make regular yogurt into Greek yogurt by pouring it into a strainer, setting it over a bowl, and letting it drain for several hours. You might just need to start with a larger quantity of regular yogurt in order to get the required amount of Greek yogurt.

    2. juli says:

plain cashew should still work just fine

  4. Jen says:

Do you know what we can sub for it if we don’t have collagen?

    1. juli says:

no, i haven’t made it another way

    2. Liza says:

Since collagen is a protein you can sub a protein powder if you have one. I do that with muffins sometimes and always turns out great!

  5. Marie says:

Will tapioca work instead of cassava?
These look great. I might have to try them for mother’s day…

    1. juli says:

      no

  6. Ashley says:

What is the difference between the Great Lakes Collagen Hydrolysate and Vital Proteins Collagen Peptides? Are they interchangeable?

This recipe looks wonderful – can’t wait to make them. Thanks!

    1. juli says:

yes, they are interchangeable. they are both collagen

      1. Ashley says:

Thanks! I buy Great Lakes by the case after you recommended adding it to coffee. It is the easiest way for me to consume protein throughout the day.

  7. Kristyn says:

Have you noticed a difference in anything since using collagen peptides? I always eye them up when I’m at the store, but am skeptical. I just got an instant pot and want to try to make some homemade coconut yogurt, which also calls for them.

    1. juli says:

haha yep, just like i mention in the post, collagen has been life changing

  8. Cristal moffis says:

Do you think substituting coconut sugar for the maple sugar would be ok?

    1. juli says:

yes, the color of the muffin will just be different

  9. dc says:

    These muffins look yummyyy!

I literally mix my collagen, protein powder, and some berries in a bowl of greek yogurt and stir like a crazy person, and eat. Lazy person’s smoothie. – less crap to clean. Now we wait for hair to grow 😉

  10. Court says:

Can I just use real Greek yogurt if I’m cool with dairy?

    1. juli says:

      yep
