There I said it.

You know how you buy something expensive and then you regret it later? I have two expensive dresses that I’ve bought online and both are too short. Ass cheeks out and all. But I will still make them work at least once even though I regret purchasing them. That way I feel better about it. Our house, on the other hand, I DO NOT regret purchasing. Most expensive thing we have ever bought and I’m loving it more every single day. It’s not perfect, we have a lot of yard work to do and organizing to accomplish, but I love it. I love the smell, I love the light, and I love the memories we’re going to make here.

But what’s up with new houses having weird sounds? We used to live off a super busy street where people were wandering drunk and yelling obscenities at all times of the night. Now we are in a quiet area, with barely any cars driving by. It’s quite lovely. Minus being able to hear a pin drop. Sometimes I wake up at night freaking out because I heard a creak in the floors. Who is there? Am I about to die? Is the end of my life going to be a Dateline story? Before I would be cooed to sleep with the sounds of ambulance sirens, but now I must fall asleep to the sound of my own breathing. I think this is the closest I will get to country life…since I’m still in the city.

Balls, we have a wedding to plan soon.

But let’s get back to food talk: leftovers. If you don’t like leftovers, GET YOUR LIFE TOGETHER. Leftovers are what life is about. Having a leftover meal for lunch the next day is similar to the feeling you get winning the lottery. Pretty similar. Well kind of. Probably not at all, but I haven’t won the lottery YET so I’ll let you know once I do. Anyways, leftover make people happier quicker and keep you from diving into a pizza. But not all leftovers are the same. Some suck as leftover…like fish. Don’t be the person who brings leftover fish to work and reheats it in the microwave. GET YOUR LIFE TOGETHER. A Meal Made For Leftovers: Quick Loaded Chorizo Burgers with Pan Fried Sweet Potato Fries

Ingredients

Scale

For the condiments

  • 3/41 pound bacon
  • couple handfuls of arugula
  • 1 avocado, sliced
  • homemade mayo or Primal Kitchen Mayo

For the burgers

  • 1 pound ground beef
  • 1 pound ground chorizo
  • 1 small shallot, minced
  • 2 garlic cloves, minced
  • salt and pepper, to taste

For the pan fried sweet potatoes

  • 3 tablespoons Tin Star Foods Ghee
  • 1 large white sweet potato, peeled and sliced into thick matchsticks
  • James Ketchup, for garnish

Instructions

  1. Preheat oven to 375 degrees.
  2. Place bacon on a foil-lined rimmed baking sheet and into the oven to bake for 15-20 minutes, or until crispy. Remove from oven and place on a paper towel to soak up the excess fat.
  3. While bacon is cooking, in a large bowl mix together all ingredients for the burgers until well combined. Divide meat into 8 equal patties, forming in your hands and pressing the middle in with your thumb (this will keep the meat from puffing up when cooking.) Sprinkle salt on the top of all the patties.
  4. Place a cast iron grill pan on the stove to heat up over medium heat. Place 4 burgers salt-side down on the grill pan to cook for 6-8 minutes per side for medium. Remember to salt before you flip them over.
  5. While burgers are finishing cooking, place a large cast iron skillet* over medium heat and add the ghee. Once melted, add the sweet potatoes to the pan. It’s fine if they crowd a bit. Sprinkle with salt and let cook for about 2 minutes, then toss, cook again for 2 minutes then toss again. Repeat this until all sides begin to brown and become crisp. The cast iron skillet should keep the fries from burning while browning them!
  6. After the first four are done, set aside and do the exact same thing with the last 4 burgers.
  7. Once all burgers are done, place the patties that you will not be using in a closed container and into the fridge or freezer for leftovers.
  8. For the burgers you will be eating: place each burger on top of a handful of arugula, top each with mayo, bacon, avocado and serve next to fries and ketchup. Dinner is simple, buttercup!

Notes

*the cast iron skillet is super important, it keeps the best temperature and gets the best crust on the fries

    I live in the city and am used to falling asleep to sirens and loud drunk people too. It’s been quiet lately so I downloaded a sleep sounds app on my phone and now I go to sleep to the sound of the ocean or rain. I am officially an old person!

    I bought a cheap little desktop fan in Target – think maybe $15 at most – and that sucker makes just the right amount of white noise to make it so I can sleep in my quiet neighborhood!

    Homemade mayo is my favorite way to top burgers. LOVE chorizo too, this is so up my alley. Japanese sweet potatoes are my number one right now too.

    Our house makes strange noises as well! It literally sounds like sound is walking upstairs at times. My father in law who is a home builder states that this is totally normal. The ground is always expanding and moving which same goes for homes. Weird huh!

    Leftovers are my life. Seriously. As a busy college student, I live off my Sunday night leftovers for the whole week, so thank you for making a recipe specifically with seconds and thirds in mind! On a side note, I’m in Germany for the semester and can’t find sweet potatoes here, which is a tragedy, so I’ll have to make this with regular potatoes.
