Moroccan Carrot Salad

A few months ago I accidentally purchased ten 32-ounce bags of carrots. I was ordering online and thought I was purchasing 10 individual carrots. This is why reading is important, people!! Instead of heading into the store to return them, defeating the entire purpose of using Amazon Prime Now to purchase my groceries, I decided to take it on as a challenge. And I have to say, I crushed it. I made Carrot Breakfast Cookies, Carrot Fritters, I roasted them, cooked them in an air fryer, AND I made a Moroccan Carrot Salad and fell in love with the recipe. The hardest part about this recipe is grating the carrots. And if you think getting bigger biceps isn’t worth it, I can’t help you.

Can I send you a little update from my bathroom renovation life? Because I think I may need therapy after it’s all said and done. You guys. This bathroom renovation has been going on since APRIL 1ST!! This is insanity to me since our bathroom isn’t big…like at all. Things moved much slower than we expected, then we had a fabricator who took our money then wouldn’t call us back, then we finally got our money back, got a new fabricator who came in to cut the marble yesterday, then guess what happened? Our bathroom would be done by Wednesday once the plumbers and electrician came through…then our contractor drilled a hole in the wrong place of one our cabinets. Which means another week has been tacked on while we wait for a new door of the cabinet. This all bums me out because I’m going to need YEARS before I do any other renovation. My question is – do renovations EVER go smoothly? Has anyone out there actually had a good experience? Please say yes!

On a much more fun and happy note, can we just take a second to PRAISE Taylor Swift for her new music video and song?! I’m obsessed. I’ve watched it about 20 times at this point and I already can’t wait to watch it again. Whenever someone asks what my favorite concert was, I quickly say TSwift. She was one of the best performers I’ve ever seen. And she works her ass off to spread love and equality, especially to the younger generation. Why can’t we have more lovely celebrities like her?! Now excuse me while I go watch her video again and remind myself that there are still good people out there in this world. Sometimes it’s easy to forget. I love her.

Moroccan Carrot Salad

Ingredients

Scale
  • 56 large carrots, finely grated (about 4 cups grated)
  • 1 shallot, thinly sliced
  • 1/2 cup parsley, chopped
  • 1/3 cup raisins
  • juice of 2 lemons (~1/3 cup)
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon coriander
  • pinch of cayenne pepper (~1/8 teaspoon)
  • pinch of black pepper

Instructions

  1. Finely grate carrots and place in large bowl. Add shallots, parsley, and raisins.
  2. Then add olive oil, salt, garlic powder, cumin, coriander, cayenne pepper and black pepper. Mix to combined. 
  3. Serve immediately OR let it sit in the fridge for a while because the flavors just get better with time!

  3. We recently renovated the entire house, while living in it! It was rough, we started beginning of March and we tied it all up at the end of May. We had 3 phases. Phase 1, kitchen, family room, living room and hall bathroom plus all flooring. Second phase, all 4 bedrooms plus the master bathroom. Third phase, backyard and garage. Considering all we did there weren’t a ton of issues that came up. We had to redo the master closet shelving, they made them too shallow. The vanity top and sinks were cracked when we were ready to install in the master bath. The master shower glass cracked when they tried to install it. The kitchen open shelving still hasn’t been installed ?.

    Id like to add we did this all with 3 dogs and 3 kids, the youngest being 6/7 months when we began. We also went on vacation for a week when they did the bedrooms.

    I’m so glad we did it all at once though just because it’s done and we don’t have to do it again for a long long looooonnnngg time. And we love our home and have been enjoying all parts of it.

  4. This looks great! I always buy the 10lb bag of carrots at Costco and then rush to use them all! I’ve only done a new home build and a small reno and both were disasters! The new home build was horrible – builder went bankrupt and we had to start all over and pay someone again. It was a mess

  5. Although biceps are “grate” (I know, so funny), you should see if your food processor has a grater attachment. I always wondered what the other weird looking blades were that came with mine and one grates! It’s amazing!

  6. This was SOOO good. We made it last weekend (along with baby back pork ribs). The combination was perfect and we had so many compliments.
    I have to laugh at some of the comments here as to grating.
    Although it is not advertised anymore – check on the Presto Salad Shooter (on Amazon). I have had mine for at least 25 years and it works like a charm. It is also great for small kitchens and dishwasher safe.

  7. I use Debbie Myers Green Bags to store my produce and they WORK! Everythings last a long time, less stinky and I have reduced my plastic usage by putting the produce directly in my cart and not using their bags when I know I’m going to transfer them when I get home. I will be making this recipe this week to take to a party. Sorry to hear about the renovation woes. Based yours and the multitude of similar stories I think I’ll just move when I decide we need a bunch of changes!

  9. Absolutely LOVE this recipe. I bring this to pretty much every BBQ. Someone always compliments me on it when I bring it to a party. I love making it to have as a side dish or to throw into a buddha bowl.
