New Cooking Video!!

Have you guys seen my recent cooking videos?? My goal is to share a new cooking video with you guys every Tuesday, but the cooking videos I recently recorded were all old recipes just so I could get the hang of the videos and get comfortable with the camera crew. So in case you missed it, here are the cooking videos I shared:

Soooooo I’m in Mexico right now and all I want out of life is to be home. It’s been a tough trip. Our airbnb has smelled like poop the entire time, I bruised the sh*t out of my foot somehow, then I got the most painful food poisoning of my life. Like, AWFUL!! I slept 10 hours last night and it was so needed. For our last day, I spent most of my time in bed. And now eating and drinking anything while still in Mexico sounds absolutely awful but I’m still incredibly hungry and dehydrated. I’ve been to Mexico probably 5 or 6 other times and I’ve never been sick like this. But I’ve also always stayed at an all inclusive resort and this time we rented an apartment. Now I’m regretting renting an apartment.

When I talked about getting food poisoning on my instagram, a bunch of people wrote me letting me know that they got food poisoning from the same Thai restaurant I went to and some got food poisoning from shrimp, which I ate A LOT of. I rarely eat shrimp at home since I live in a landlocked state and thought shrimp when you’re right by the ocean made more sense, but I guess I was completely wrong.

I guess I need to stay home for a while and just eat chocolate bark. Yep, that definitely makes more sense. But that won’t be happening any time soon because I land tonight at 8pm and leave for Omaha first thing tomorrow morning. Sheesh. I miss my bed! And non-feces smelling home.

Pecan Pie Cookie Bark

Ingredients

Scale

For the caramel sauce:

  • 1 cup heavy cream or full fat coconut milk
  • 1 cup fine maple sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon coarse sea salt

For the bark:

  • 1/3 cup toasted pecans
  • 1 cup mini chocolate chips, melted + extra for garnishing
  • 78 gluten free pecan cookies
  • flake salt, for garnish

Instructions

  1. Make caramel sauce: In a small saucepan over medium heat, combine all the ingredients. Stir until completely combined. Bring to boil then set a time for 12 minutes, being sure not to let the mixture boil over. After 12 minutes, reduce the heat to low and simmer for 5 more minutes or until the caramel coats the back of a spoon. Remove from heat, let cool for 5 minutes. 
  2. While the caramel sauce cooks, preheat oven to 350 degrees F. Place pecans on baking sheet and in the oven to roast for 10 minutes until dark and fragrant.
  3. Melt chocolate in double boiler or in the microwave.
  4. Pour chocolate on a parchment paper lined baking sheet and spread evenly throughout.
  5. Add cookies to melted chocolate along with toasted pecans. Use a spoon to spread caramel throughout the chocolate. Sprinkle chocolate chips on top along with flake salt.
  6. Place in freezer to harden for 30 minutes then break into pieces.

    Juli,

    I’m so sorry to hear that you got so sick on your trip and I hope you have an easy and safe flight home. Sometimes the food and water are treated differently at the resorts than at regular non-resort restaurants. Hopefully you are able to get better ASAP!

    KEEP THE VIDEOS COMING!!! They are great to watch and they are a wonderful addition to your website!! It would be awesome if you one day got your own show, you are great in front of the camera and its nice to see all of your stuff come together.

    I cannot wait to try this bark out!

    Hopefully that doesn’t deter you from visiting again! You have to be careful about certain seafood, things like ceviche (even though the acid is supposed to cook the seafood) and especially because you dont know how fresh it is, so when I visit MX I stick to fresh caught (that same day) grilled fish if I order seafood. I also typically avoid fresh vegetables or fruits where you eat the skin unless I know they were properly washed (they use a special antibacterial solution to wash). Also obviously dont drink the water (that includes ice). Hope you feel better, drink lots of coconut water to replace electrolytes!

      well i definitely had ceviche and shrimp at other meals! i had no idea that was one of the things i needed to avoid! i’ve never had issues in the past so i thought i was on top of everything, but obviously not! damnit! and i’ve always had the ice when i’ve been down there, but i’ve also always just stayed on the resort. do you stay away from all ice all together? i can’t imagine warm drinks in mexico lol

        Hah, yea warm drinks not the best when you’re in 90 degree weather with 90% humidity. I’ve never had an issue with ice at resorts but I’ve always been told they use filtered water. I typically avoid the ice when I eat at places outside of resorts and will just order cold bottled water or coconut water straight from the coconut, and I’ve been told a few of the light Mexican beers (Corona, Pacifico, etc) are gluten free since it has < 20ppm but I would double check that. And of course tequila shots hehe

    I really enjoy watching the cooking videos, I think you do a great job of being really dynamic and interesting without veering into freakishly perky territory that some people fall into when they are trying to be interesting on camera. It always looks so much easier than it is so awesome work!

    You poor thing! I got Ecoli when we went to Mexico. Luckily, I didn’t get REALLY sick until we came home but I ended up with kidney infection. I hope you feel better soon!

        It was! And it was during my destination wedding/honeymoon. Thank God I didn’t get really sick until we came home. (Of course, if I’d listened to my mother in the beginning, I’d have gone to the doctor right after I got home!)

    Hope you feel better for your next trip. Thank you for the recipe. Are you able to say which restaurant gave you food poisoning? I was just in Tulum but stayed at the Dreams All Inclusive. We loved it and had no issues with the food.

      i’ve never had an issue at an all inclusive, this was the first time we didn’t do an all inclusive. I’m honestly wondering if it was a meal i had on the beach because i had shrimp ceviche and think it wasn’t all the way cooked. or it could have been the thai restaurant at the mezzanine hotel where i also had shrimp. in the end, just stay away from shrimp lol!
