Sure, Valentine’s Day is about love and whatever, but it’s more so about desserts. That’s just a fact. I didn’t make it that way, the government did. Yep. I believe in a conspiracy theory about Valentine’s Day put in place to boost the economy. It makes sense, doesn’t it? It’s the down time after Christmas and New Years, something has to get people excited again!

Either way, I love Valentine’s Day because it gives me an excuse to make a GIANT dessert, after eating 3 bites of my dinner, and be lazy on the couch with my man. That’s what we did last year since we had just moved into our new place together. This year, he has to work late so afterwards we will be eating dessert and talking wedding details since this will be our first Valentine’s Day as an engaged couple! Eeeeeeek. I think we’ve almost decided where we are going to do our destination wedding and I’m just so damn excited! That means wedding dress shopping and picking bridesmaid (and my bridesman) colors and all the other fun junk that goes along with it. I’m so excited we are doing a destination wedding, I can’t imagine doing it any other way.

Ok, enough of me being annoying. Let’s get our dessert on!

“Peanut Butter” and Jelly Ice Cream

This dessert is so incredibly decadent. It’s perfect for Valentine’s Day. I wish I could say I came up with it, but this is all Michelle from Nom Nom Paleo. You absolutely should make this.

Nom Nom Paleo Cookbook Review: Mexican Chocolate Pots de Creme

These are BY FAR my favorite cookie on my blog. They never disappoint. You wanna know what I did with them the other day? It’s naughty, but you were warned. I was having a crap day and what did my guy do? He came to the rescue, as always. As soon as we finished our workout, we headed to frozen yogurt to take home for later. I topped my caramel frozen yogurt with sprinkles, walnuts, and this cookies crumbled on top. I died.

Can’t wait to hear details of the wedding!! I’ve ALWAYS wanted a destination wedding (I can’t even picture a “normal” wedding) and am excited to hear your details/tips/tricks for when I need them (hopefully soon ;)) Woohoo!

Can’t wait to see what you decide for wedding planning! We are doing a destination wedding (Hawaii in May!) and it has literally been the best decision ever. So much less stress and I didn’t want to have a big hoopla (hootinany? bru-haha? Whatever.) here at home. Happy first engaged valentine’s day! 🙂

welllll i’m a little unsure since my fiancé has to work late, but i think i’m going to make the pizza from my third cookbook, then i’m using cappellos cookie dough to make a giant ooey gooey cookie and i’ll top it off with some gelato. we did that last year and it was to die for

Hi Juli- you often use almond flour in your recipes. I am allergic to nuts so I have to substitute. I usually use a blend of tapioca and coconut (no issues with coconut thank goodness). Is there a better substitute for almond flour that you recommend? I also just want to say I have only been paleo for 5 months and your blog and cookbooks have helped me so much and everything is AMAZING! My husband even says I am becoming quite the cook, which says a lot and I find that I actually enjoy cooking now and making your recipes. So thank you!!

    1. juli says:

      i haven’t tried them another way so i don’t have a substitute

    2. Tasha says:

Crystal, as I’m sure you’re already aware, since coconut flour absorbs so much liquid, it’s difficult to use it as a substitution in existing recipes. Fortunately, there IS a great nut-free alternative that you can swap 1:1. Sun-flour! Just buy raw sunflower seeds & put them in a blender (I use a Vitamix), coffee grinder, or food processor until you reach flour consistency. It’s a great alternative that gives paleo baked goods similar taste & texture as almond flour.

Just one word of caution: if you use it in a recipe that contains baking soda, it will cause a chemical reaction with the chlorophyll in the sunflower seeds & give your baked goods a green tint =). This is great for kids & St Paddys day, but adding a small amount of acid to the recipe will easily fix this situation–like a teaspoon of apple cider vinegar or lemon juice.

      Happy baking!
