Ummmm, I’d like one of everything please! Thanks for putting this drool worthy list together. I’ve been struggling with breakfast ideas recently and now have a go to list.
I heard this on parks and rec the other day, and it’s so true. Why would anyone eat anything other than breakfast food, all the time?

How about a freezer meal roundup?? I’m expecting my third baby and I’m trying to come up with a list of paleo meals I can make ahead and throw in the freezer for the first couple weeks with a new baby. Some of your casserole dishes look great for this, but I don’t know which veggies will hold well in the freezer. Cauliflower rice? Zucchini? Planning on doing some meatballs, your spaghetti casserole…not really sure from there. Do you think your muffins/waffles would hold up in the freezer?
I have 4 kids and did the freezer casserole thing, so I get it! The sweet potato enchiladas, made into a casserole (don’t wrap the meat in the potatoes, just layer everything) freezes beautifully. Any frittata can be made into a casserole and frozen with good results, and the egg muffins can too (we take them on EVERY vacation frozen!). The other muffins and waffles and pancakes freeze nicely too. The meatloafs can be made in casserole form and frozen, or frozen as-is…I am about to try to freeze the four-layer bacon beef casserole from the new cookbook and can’t imagine that will be bad! Good luck! I know with all the prep work I did pre-babies, we ate like kings (probably better than we do now, lol!).
Of all the meals I fall into a rut with, it’s breakfast. Not that eggs, bacon, & avacado are all that bad, but it’s nice to have an occasional change-up.
I love the short-rib breakfast taco idea; especially in that I’ve not yet made my own paleo ‘tortillas’.
